Honey Chipotle Criss-Cut Chicken

What is Criss-Cut Chicken?
Think of this as the chicken version of waffle fries – we can call it waffle chicken! If you’ve ever made hasselback chicken or potatoes before, the process is very similar.
First we’ll make cuts along the longer side of the chicken breast so vertically. You only need about 4 long cuts but do not cut all the way down, just about 2/3 of the way down. Then cut across horizontally 2/3 of the way down again, about 7 cuts across. And that’s it!
So what exactly is the point of this? Other than the fact that it makes the chicken look really cool of course. The technique is basically an extreme version of scoring chicken. Making these cuts helps the marination seep deep into the chicken for extra flavor in every bite. It turns out so juicy and delicious and it’s just really fun to make as a bonus.
Once the chicken is criss-cut, it’s time to season it up! Of course this marinade works with regular chicken breast too and it’s still so good.
The Ingredients You Will Need:
- chicken breast
- olive oil
- garlic powder
- chili powder
- black pepper
- chipotle paste
Just add all the ingredients to a small bowl and mix it together. It’s very important to pre-mix it in a small bowl and then add to the chicken because the cut chicken is very delicate. It’s easier to evenly distribute all the spices this way.
Once the marinade is ready to go, spread it evenly over the chicken breast and make sure it seeps deep inside and also covers both sides.
What is Chipotle Paste?
This is a secret weapon in the kitchen! It’s packed with sooo much flavor and it’s a really cheap ingredient to buy. You can find it in the international section of a supermarket or at local Latin or Hispanic stores. They’re sold in cans like this brand that can be found online or in Target too. Inside the can, there’s chipotle peppers and adobo sauce. We will ONLY be using the adobo sauce in this recipe since the chipotle peppers are very spicy. You can use the chipotle peppers in a dish or sauce that you want to impart a spicy and smokey flavor in.
Cooking the Chicken
Once the chicken is marinated, it’s time to get cooking!
Make sure to grease the pan with a little oil and add the chicken, uncut side face down. Sear on one side over medium-high heat for 5 to 6 minutes until golden and then flip over. Cook on the other side 5 to 6 minutes. Then flip right back over so the cut side is face up. Lower the heat and add the unsalted butter, lime juice, honey, and chopped cilantro to the pan. Baste the chicken a few times and take off the heat.
Once off the heat, it’s ready to go! My favorite way to enjoy it is with some cilantro lime rice and avocado or some salsa in a bowl for the perfect meal.

- 1 pound chicken breast 2 large breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/2 teaspoon oregano
- 2 tablespoons chipotle adobo paste
- 2 to 3 tablespoons honey
- 1 tablespoon lime juice
- 1 to 2 tablespoons unsalted butter
- Start out by scoring the chicken breast to create the criss-cut design. Cut vertically first about 2/3 of the way down but not all the way down. Make about 3 to 4 vertical cuts. Then cut horizontally across the breast also about 2/3 of the way down. Now the chicken will appear to have squares all around. This will allow the marinade to seep in.
- In a small bowl combine olive oil, salt, garlic powder, chili powder, black pepper, cumin, coriander, oregano, and adobo paste.
- Cook on a hot skillet or pan over medium-high heat. Get a golden brown sear on both sides. Then turn the heat to low and cover until the center is cooked through.
- At the end, add a knob of unsalted butter along with honey, lime juice, and cilantro. Baste the chicken and then take off the pan.
- Enjoy warm!
