Honey Mustard Salmon

University is back in session for me which means I’m more limited with the kitchen I have in my apartment. I still love to challenge myself but sometimes sheet pan dinners are the way to go. This honey mustard salmon is perfect if you are on a time constraint and it can last you an entire week. Who said meal prep had to be boring?

If you are new to meal prep and a student or person on the go, try thinking about what your meals are mostly composed of. I usually have a portion of protein with a salad or veggies so I think about what protein I’d like that week and prep it.

You don’t have to be eating the same chicken and broccoli every week to reach your goals. All you have to do for this recipe is combine all the ingredients for the honey mustard sauce, coat the salmon in it, and bake! While it’s cooking, you can meal prep the rest of your meal.

The beauty of this recipe is you can customize it how you like. If you like it sweeter, add more honey or if you don’t, add less! My recommendation is to try the sauce as you go and modify it to your taste.

This honey mustard salmon is perfect if you are on a time constraint and it can last you an entire week. Who said meal prep had to be boring?

Ingredients

  • 1 pound Wild Alaskan Salmon
  • 1/4 cup mustard
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • juice of 1/2 lemon
  • 1 teaspoon fresh garlic, minced
  • 1 teaspoon fresh ginger
  • 1/2 teaspoon smoked paprika
  • 1/2 red pepper flakes
  • 1 teaspoon sea salt
  • chopped cilantro, garnish

Instructions

  1. Preheat oven to 350F on bake.
  2. Combine mustard, honey, olive oil, lemon juice, garlic, ginger, paprika, red pepper flakes, and sea salt in a small bowl.
  3. Line a large baking sheet with aluminum foil and spray with oil as salmon tends to stick. Place the salmon on the foil and coat in the honey mustard sauce evenly.
  4. Completely seal the salmon in foil and bake for 14 minutes. Remove from the oven and uncover the top. Change the oven setting to broil and place the salmon in for another 2 to 3 minutes, keeping a close eye on it. This will allow the sauce to caramelize into a thick glaze.
  5. Remove the salmon from the oven, garnish with cilantro and enjoy!
