Ingredients

Cake
  • 15.25 oz white cake mix box
  • 3.9 oz instant vanilla pudding powder
  • 3/4 cup sour cream
  • 4 large eggs room temperature
  • 3 tablespoons heavy whipping cream
  • 1/2 cup whole milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips chopped
  • 1 cup raspberries chopped in half
Cream Cheese Frosting
  • 16 oz cream cheese room temperature
  • 1/2 cup unsalted butter room temperature
  • 3 1/2 cup powdered sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 325°F.
  2. In a bowl, add cake mix, pudding powder, sour cream, eggs, heavy whipping cream, milk vegetable oil, and vanilla extract. Whisk until smooth or use the paddle attachment with your stand mixer.
  3. Add the white chocolate chips and raspberries and mix into the batter using a rubber spatula.
  4. Butter a bundt pan and sprinkle flour. Tap any excess flour out. Pour the batter in and pop in the oven to bake for 52 to 55 minutes or until a toothpick comes out clean from the center.
  5. While the cake bakes, make the frosting. Beat together cream cheese, unsalted butter, powdered sugar, and vanilla, using the paddle attachment for about 2 minutes until it's smooth.
  6. When the cake is done, allow to cool for 30 minutes. Then run a knife around the edges and flip it over onto a plate.
  7. Once the cake has cooled completely, add the frosting to a piping bag with the tip cut off. Pipe the frosting starting from the outside to the center. Repeat until the cake is fully frosted. Then, decorate with flowers or fill the center with more frosting.
  8. Cover and chill in the fridge until ready to eat.
Tips & Notes
  • To make the chocolate chocolate chip cake instead, use Devil's Chocolate Food Cake Mix instead of white cake mix and add chocolate instant pudding powder instead of vanilla chocolate pudding powder. Then add
  • To make the confetti/birthday cake, use confetti cake mix instead of white cake mix. Omit the white chocolate chips and raspberries.
  • To make the red velvet cake, use red velvet cake mix instead of white cake mix. For the pudding powder, you can use chocolate or vanilla or half of each. It is up to you whether you want a stronger chocolate flavor or not. Then omit the white chocolate chips and raspberries. Add 1 1/3 cup milk or semi-sweet chocolate chips instead.

Can you make this using regular round pans? Also, can you use a yellow cake recipe by scratch in place of boxed cake?
