Pizza Grilled Cheese

The best way to enjoy a grilled cheese is to make the pizza version! It’s a combination of everyone’s two favorite cheesy foods and it couldn’t get more delicious than this. Picture garlic and herb toasted bread with turkey pepperoni, marinara, and lots of cheese and basil stuffed in between. Super easy to make and always a hit regardless of age too!

The Garlic and Herb Spread

To make the garlic spread, here’s what you will need:
  • mayonnaise
  • minced garlic
  • chopped parsley
  • black pepper
  • oregano
  • parmesan

Now if you’ve never tried using mayo to toast bread for a sandwich or grilled cheese, you are definitely missing out! Do not judge until you try it as it’s a huge game changer. If you don’t want to use mayo, just use butter but I still recommend mayo.

Just mix all the ingredients together in a small bowl for the garlic spread and that’s it for this step.

Assembling the Grilled Cheese

The best part about this recipe is the prep is super simple and takes less than 10 minutes. After making the spread, it’s time to layer it all up together!

Now you have two options:
  1. Layer it on a plate or parchment paper and then transfer to the pan.
  2. Layer it directly on the pan over the stove so you don’t have to transfer it.
Here is the order of the layers:
  • bread with spread
  • shredded mozzarella
  • dollops of marinara
  • pepperoni
  • chopped basil
  • grated parmesan
  • shredded mozzarella
  • bread with spread

Start out by spreading about half a tablespoon of the garlic and herb spread on one side of each toast.

Flip over and start assembling on one side. Add a little bit of shredded mozzarella. Then add dollops of marinara on top along with the pepperoni, basil, and parmesan. Finish off with a bit more mozzarella and seal it shut with another piece of toast – spread side up.

Cooking the Grilled Cheese

Heat a pan over medium low heat and add the assembled sandwich on. Cook for about 3 minutes on each side. Flip over once golden and repeat with other side. The cheese should be fully melted and the bread should be golden brown on both sides.

The key to the perfect grilled cheese is not cooking it on too high of a heat. If the pan is too hot, the bread will burn before the cheese gets to melt. Some people will say to cover the pan with a lid to help the cheese melt but I think that makes the bread a bit soggy instead of crispy so I don’t do that.

But that’s it! Now just enjoy with more marinara on the side to dip in!

Tips & Notes
  • Instead of adding the marinara inside, you can also leave it out and just use it as a dip.
  • Feel free to use sliced mozzarella cheese instead of shredded!
  • Instead of mayo, you can use softened salted butter for the bread if you prefer.
  • For the pepperoni, you can choose to cook it a bit on the pan before adding it to the grilled cheese or just leaving it as is. Either way works fine.
