Shish Tawook – Chicken Skewers

Juicy chicken skewers that are the perfect Middle-Eastern inspired barbecue for the whole family to enjoy! The Shish Tawook marinade is packed with fresh flavors from the garlic, yoghurt, and lemon juice but then it’s warmed up with the sweetness of tomato and allspice. They’re so easy and even if you don’t have a BBQ to grill outside, you can make them in the oven or in a cast iron skillet grill pan!

The Ingredients

This recipe is super simple and the marinade comes together in less than ten minutes. Here is everything you will need:

  • chicken breast
  • olive oil
  • plain yoghurt
  • tomato paste
  • minced garlic
  • lemon juice
  • oregano
  • cumin
  • paprika
  • salt
  • black pepper
  • allspice
  • ginger
  • dash of cayenne 
  • green and red bell pepper
  • red onion

Just cube the chicken breast and combine it with the olive oil, yoghurt, tomato paste, minced garlic, lemon juice, and all the spices. Mix all together and that’s basically it. You can cook it right away or let it marinade for an hour, for the day, or overnight!

Skewer them with some chopped red and green bell peppers and on the grill they go!

If you would like to use chicken thighs instead of chicken breast, that works just as well too.

Once they’re off the grill, I love to garnish it with some parsley and sumac on top for a bright touch and then it’s ready to enjoy.

Ingredients

  • 2 pounds chicken breast, cubed
  • 3 tablespoons olive oil
  • 1/3 cup plain whole milk yoghurt
  • 2 tablespoons tomato paste
  • 2 tablespoons minced garlic
  • 2 tablespoons parsley, finely chopped
  • 1/4 cup lemon juice
  • 2 teaspoons oregano
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon allspice
  • 1 teaspoon ginger
  • dash of cayenne powder
  • green and red bell pepper, sliced
  • red onion, sliced

Instructions

  1. In a large bowl, add the chicken which has been cut into small pieces.
  2. Then add the olive oil, yogurt, parsley, garlic, lemon juice, paprika, cumin, salt, allspice, oregano, ginger, black pepper, and cayenne powder.
  3. Mix all together to marinade evenly.
  4. Cover and let it sit in the fridge for at least an hour or overnight if you have time. Otherwise, just half an hour or immediately.
  5. If you don't want the wooden skewers to burn in the oven, soak them in warm water for about 20 minutes.
  6. Preheat your BBQ/grill.
  7. Thread the pieces of chicken onto the skewer along with the bell peppers and red onion. Once the skewer is full, repeat with the other skewers until all the chicken is threaded.
  8. Grease your grill and add the skewers.
  9. Roast on each side for 5 to 6 minutes until it has some nice BBQ marks all around. Make sure the chicken has cooked through in the center, about 15 to 20 minutes and then take off the grill.
  10. Garnish with more parsley and a sprinkle of sumac. Serve warm.
