Ingredients
Grilled Chicken
- 1 pound chicken breast cut in half
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
Buttermilk Ranch
- 1 cup mayonnaise
- 1/3 cup buttermilk
- 1 tablespoon yellow mustard
- 1/4 to 1/2 teaspoon salt to taste
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon lemon juice
Other
- flour tortillas
- shredded Colby jack cheese
- shredded lettuce
Instructions
BUTTERMILK RANCH
- In a small bowl, combine mayo, buttermilk, yellow mustard, salt, black pepper, garlic powder, and lemon juice to make the ranch. Set aside.
CHICKEN
- In a small bowl, add olive oil, paprika, garlic powder, salt, oregano, black pepper, and cumin. Mix together.
- Cut chicken breasts across in half to get thinner breasts.
- Pour the marinade over the chicken and coat evenly.
- Heat a large skillet or pan over medium-high heat. If your pan sticks, spray with oil.
- Add chicken to the pan and cook about 5 to 6 minutes each side or until the center is 165°F.
- Chop into small pieces and set aside.
ASSEMBLY
- Grab a flour tortilla. Place shredded lettuce on top, then the shredded cheese, then the chicken. Drizzle ranch on top and enjoy!
