Ingredients

Grilled Chicken
  • 1 pound chicken breast cut in half
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
Buttermilk Ranch
  • 1 cup mayonnaise
  • 1/3 cup buttermilk
  • 1 tablespoon yellow mustard
  • 1/4 to 1/2 teaspoon salt to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon juice
Other
  • flour tortillas
  • shredded Colby jack cheese
  • shredded lettuce

Instructions

BUTTERMILK RANCH
  1. In a small bowl, combine mayo, buttermilk, yellow mustard, salt, black pepper, garlic powder, and lemon juice to make the ranch. Set aside.
CHICKEN
  1. In a small bowl, add olive oil, paprika, garlic powder, salt, oregano, black pepper, and cumin. Mix together.
  2. Cut chicken breasts across in half to get thinner breasts.
  3. Pour the marinade over the chicken and coat evenly.
  4. Heat a large skillet or pan over medium-high heat. If your pan sticks, spray with oil.
  5. Add chicken to the pan and cook about 5 to 6 minutes each side or until the center is 165°F.
  6. Chop into small pieces and set aside.
ASSEMBLY
  1. Grab a flour tortilla. Place shredded lettuce on top, then the shredded cheese, then the chicken. Drizzle ranch on top and enjoy!
